1 cup almond flour
1 cup unsweetened shredded coconut
1/4 cup + 1 tbsp maple syrup
1 tbsp melted coconut oil
1/2 tsp vanilla extract
1/2 tsp salt
2 packets Elaine Wellness collagen
1/4 cup mini chocolate chips
Whip these up in a food processor or by hand.
Mix everything together except the chocolate chips until it comes together in a ball. Place in a bowl and mix in the chocolate chips with a spatula. Use a small ice cream scoop and make it into balls. Refrigerate until they firm up. Store covered in the refrigerator or they can be kept frozen.
